Black Bean Rayu Sauce
White Mausu create Asian inspired chili oils known as rāyu, a condiment made from a vegetable oil base infused with chilli peppers and other ingredients.
The Black Bean rāyu is a umami-rich sauce of fermented black beans. The flavour is layered with smoky savoury miso notes combined with the heat from gochugaru and chilli flakes. This versatile hot condiment is ideal as a dipping sauce for dumplings and tempura, mixed through rice or noodles and compliments vegetables and meats alike.
Ingredients: Sunflower oil, Chinese black beans (soya), black sesame, gochugaru, chilli flake, tamari (soya), garlic, sichuan pepper, raw cane sugar, sea salt, cinnamon, star anise.
